Loïc Guitaut a49b2dc46c DEV: Enable Pitchfork by default (#37679) ...

This changes the logic from opt-in to opt-out regarding Pitchfork.

Now, instead of having to explicitly set `RUN_PITCHFORK` to `1`, it has
to be set to `0` to switch back to Unicorn.
