Filter the branch's own build checks too

The path filters that just landed on master cover the workflows that
exist there. These five are new on this branch and were still firing on
every push, which is what starved the macOS runners repeatedly today:
each documentation or workflow commit started two macOS appbundle builds
that no change could possibly have affected.

Each now lists what it builds from. The two that consume pgbuild also
list the composite action that fetches it, since a change to how the
dependencies are installed changes the build as surely as the packaging
does.
